Most websites do not gather information they do not ask you for directly. The best way to avoid this type of information gathering is to not use autofill.

On an iPad, or iPhone using Safari, go to settings->safari->autofill. Make sure you are not using autofill. Also check any saved credit card details. I found a few on mine were saved and I didn’t know I saved them. Click Edit and check the button for each and select delete to remove them.
On a Mac using Chrome, go to Chrome menu > Preferences > Autofill > Addresses and more > Save and fill addresses Make sure it is set to off.
